Kork is a wine bar, cheese shop, and underground cellar located in the heart of Downtown Miami. Street peddlers and nine-to-fivers make way for hip urbanites lighting up the highrises. The latest addition to this new urban oasis is Kork, opened in August. The 3000 square foot watering hole is more reminiscent of a Medieval tasting tavern than a Miami wine bar. Dark wood, iron chandeliers and heavy leather couches will encourage lingering with flights of wine and cheeses served up by Kork's own "cheesetenders".
With a hint of Medieval style decor and an underground cellar, Kork is a unique place for patrons to relax and enjoy a glass of wine from the collection, purchase a bottle to-go, or try one of the many varieties of cheese.
Kork will sponsor wine tastings and special evenings for neighbors and those looking to expand their learning of the grape. Edwards, the owner, and his team have also created a guest preference tracking system they will be able to tell you which wines you love and hate with what cheese.
The goal of Kork is to be personal. They want to know all of the customers by name and what they order. At Kork, they have a cheese pad that kind of looks like a doctor's pad for taking notes to remember what you are eating and drinking and at Kork they will remember that for the customer.
They hope to have about 500 different wines from all over the world and cheese from France, Italy and the U.S. Some cheeses are seasonal, while others will be year-round. This plate features French cheeses including Merlemont, Tomme de Savoie, Tomme du Fedou and Gres de Champenois
They have a cheese-monger who studied in Italy. She's in charge of properly storing, displaying and plating the cheese. She will have to know what the customer is drinking to also create the right wine and cheese pairing.
The customer will be able to come to Kork on the way to a dinner party. They are going to do retail as much as they do the wine bar thing. The customer will be able to buy cheese by the pound and take a bottle of wine.
